    Start with Installer...

Then as far as utilities go:
Summerboard (scrolling through apps, easily skinning the look of your phone), ToDoList (a to do list), VNotes (a voice note recorder), Lockbox (password keeper), RSS (RSS feed reader), Converter (converts all kinds of units), Apollo (AIM client), Customize (mod the appearance of your phone, rearrange order of springboard), weTool (delete individual calls/ text messages, text more than one person at a time, forward messages and phone numbers)

As far as games go, its completely up to you, but I love:
Sketches (basically an etch a sketch on crack), iBlackjack, Tetronimo (Tetris), Mines (minesweeper), Lights Off (one of the original iphone games, a fun puzzle), iSolitare, FiveDice (yahtzee), iSnake (like on the old nokia phones except you tilt the phone to move the snake), Caissa (chess), iSlots, and whatever else floats your boat
