either ssh into your ipod. if you dont know how to do this there is plenty of videos on youtube.
but essentially it is connecting to your ipod over your local wifi network and accessing all the files.
or you can go into installer and look for an app called FileBrowser. with that you can access all files on your touch and copy cut paste etc.
    hope this helps

there is also an app in installer called MobileFinder but i don't think it is as good

As you're using a Mac, the best would be to use either Transmit or CyberDuck. I use Transmit myself. Do you have a Wireless router at home? If you, you can simply use SSH and assign your iTouch an IP. Then connect to that IP using Transmit (or whatever) and make sure the protocol is set to SFTP.
Get "iPod & iTunes for Dummies", it'll change your life.
