Default How upgrade firmware and jailbreak without losing data ?
Could you please tell me how I could upgrade my 3G iPhone firmware to 4.2.1 without losing any existing data.

I'm afraid to lose all my data when I upgrade the firmware and jailbreak the iPhone.

    Please advise me. Than you.

All your AppStore stuff and saved games will be fine but you will lose all your Cydia stuff. Use pkgbackup or aptbackup then sync with iTunes before you upgrade

I'm more concerned about losing the phone #, and the pictures in iPhone.

    I have 3 questions:

    1. How can I upgrade the firmware to 4.2.1 ?

    2. If I upgrade firmware to 4.2.1 and jailbreak it with RedSn0w. Does it erase my phone # and my pictures ?

    3. How reliable is the backup feature in iTunes ? Let's say if I lose all data while upgrading, can I restore the data with iTunes ?

Update through iTunes, you will lose nothing. Just sync beforehand.
The only things you will lose are your Cydia things. Use pkgbackup to make a backup of those then when you rejailbreak, dl pkgbackup again and restore
EDIT: I just saw you want to go to 4.2.1 which can only be done if you have shsh backed up
