    ok, so i *think* i might have found a solution to those who are stuck with an iPhone 2G (Original iPhone) or iPod Touch 1G (Original iPhone). Everything is in the .ipsw file. If you modify the extension to .zip, you can unzip the file and see all the contents of the Firmware Bundle (ipsw). Inside it being a file named Restore.plist. If you take a close look at the bottom, you see a string with, for example, saying: <string>iPod2,1</string>
    I believe that if you can change this string, iTunes will let you restore your iPhone 2G with 3G firmware. You would, of course, have to deactivate 3G data. Here is a screen shot of what i mean
