Default Change WHAT to backup with iTunes???
Is there any way to edit WHAT we want iTunes to backup whenever the iPhone is sync'ed with it? I really don't need all the songs, pictures (ones transfered from PC), videos, apps, etc backed up. This takes forever (especially on my new 32Gig). This also takes up a ton of HD space on my computer.

Is there any way to just tell it to back up system/phone data? I have exchange server so that has all my contact and email data.

I'm confused. Define "phone/system data." You have a manual back-up of your contacts and I would assume your email is backed up on the host server somewhere. Your pictures and videos you can manually transfer to your computer anytime. When you restore set the phone up as NEW and then just manually sync back the contacts, apps, photos, videos... that you want. The ONLY thing you'll lose is SMS back up.
