Default Way to Make iTunes force-restore?
If iTunes is not showing me an option to update/restore, is there any way I can go around to get back to reinstalling firmware? iTunes just keeps saying "invalid sim card, go to dealer, etc." Help please?

Have you tried putting it into DFU Mode before restoring?

Are there any known issues if I want to downgrade my firmware from 2.2.1 to 1.1.4 ? iTunes starts extracting and preparing the phone, then has an error message.

I'm not sure why would would want to downgrade, 2.2.1 is unlockable for a 2G (Metal-back) iPhone. All you need to do is run Quickpwn 2.2.5 with the Sim you want to use in the phone.

However, if you are adamant about downgrading, I believe you need iTunes 7.5

Here's a tutorial for it, it is for 2.0 to 1.1.4, but the steps should be the same: iClarified - iPhone - How to Downgrade Your 2.0 iPhone to 1.1.4
