Default Tip for speeding up iPhone / iTunes Back-up
When in iTunes, with your device connected. Right click on the listing of the left of you iPhone or iPod Touch. After right clicking you will see a list of options. Select Reset Warnings. Make sure automatic syncing on Info Page is un-ticked. The next time you Sync. You will get Pop-up that asks if you what to send Reports to Apple. Un-tick the reminder box so you can see this warning each time. Select Don't Send.

This speeds the Back-up process by not sending back-up reports back to Apple. Or Crash reports etc. Works well try it.

Oh you can also interrupt the Back-up altogether by closing the Back-up in iTunes at the Top by clicking on the 'X'. And the rest of the transfer and or Sync happens. But be warned...if you interrupt the back-up you will have NO BACKUP to revert too. If you were to crash your device. Do remember to do a Back-up later when you have time.
