How do you change the icon in a theme your using?

Im sure this has been answered a thousand times (I did search but couldnt find the answer), but I recently updated to 3.0 and the messages icon sticks out from the rest of my icons. I know how to get into the ipods themes using diskaid I just dont know which folder exactly to go to and what to name the jpeg file.

In 3.0 the image name changed from "text.png" to "Messages.png"
