Itunes messing with my albums

everytime there is a update to firmware i get into the same old problem,having to use itunes to sync my music.
normaly and very happely i use media monkey.but they are a bit slow to respond to new fimware so that leaves me with itunes but everytime i import music my albums are made up of a couple of tracks here one there and often with the wrong album artwork.
is it me,am i doing something wrong when i import folders.
please help this is driving me nuts.
