Restored iPhone, Saved Contacts Help

I restored/reset/erased everything on my iphone and lost all my contacts,
pictures, txt's and all that good stuff.
I've done it before and somehow it put all my settings, pics, contacts back on somehow, I'm just not sure how or why.

I have never manually synced since then, so i should still have the same contacts and such.

I have itunes 7.5, can someone tell me how i can do this, or why i cant?

My problem is that i updated 1.12 -> 1.13 also had my Windows XP partition broken - there i had my iPhone backup. I also have one Vista and i can access XP partition. I found some folders with some iPhone *.backup but when i copy in same location (folder structure) in Vista, iTunes say nothing about that. So what is the solution? Does anyone have good feedback on this?

To the OP:

Did you do a sync before restore? If not all newest will be lost if you have sync'd in past

Just incase this ever happens again and it has happened to me before I write all my contacts down and keep them
