Make It Mine
Go to Installer, go to all packages.
Look for a app called "Make It Mine"
You can change it to what ever you want.

Thanks, I have seen that. What I really wanted to do was put a logo there, not just some text. But at least someone answered.

use customize 2.0 for the ipod.

In case anyone's interested, you can change the ipod "carrier" logo to your own logo and not just text (through Make It Mine...which is pretty cool BTW).
Size you png to about 44x20, that's what I used. You will need 2 files: one as "Default_CARRIER_IPOD" and the other as "FSO_CARRIER_IPOD" without the " ". And just SSH them into the springboard.app folder. You won't be replacing an existing file, but merely adding them.
Also, you will likely need a dark-colored one and a lighter-colored one depending on your theme. For me, the Default one is black, and the FSO is white.

this doesn't work for 4.0 because they made it a text (iPod)

create a folder on your pc called: yourname.theme. In this folder you need to create a folder called UIImages. Copy your images and rename them to Black_CARRIER_IPOD.png (transparent status bar) and Silver_CARRIER_IPOD.png (Solid status bar)

Hmm I'm on 4.3.3 and this method doesn't seem to work.

Just to recap this is what I did;
1. created CarrierIcon.theme
2. created folder UIImages
3. renamed two images Black_CARRIER_IPOD.png and Silver_CARRIER_IPOD.png
4. Applied with Winterboard.
5. Nothing changes.
