the thing I've been noticing about these programs that are being made, is that they're infact useful, but theyre so bland. Where's the color and design? It seems plain and as an artist, mac's are great with interface layout which is something I love about them.

Any plan's to make this look nicer? or any of the other programs to look more genuinely apple?

Its similar, but I put em all up. Yes, as developing for the iPhone is so open, there will be a huge variety of apps, just like there are web pages. Some will be better, some will be less interesting.
