In the old version of Customize that you have, the background was set with another app called Summerboard. Its been ages since I used either of those appsand do not recall exactly what the screens looked like but you can either open up Summerboard and see if there is a "default" theme and set that or in Customize there is a toggle to turn on/off SUmmerboard.

There is no more customize. The version you have is VERY old. There was a Customize2 that came out after the one you have, Still have that on my old 2G running 1.1.4 that my husband uses. But Customize (all versions) is no longer being supported by its developer. Most folks have upgraded to 2.x firmware and are now using Winterboard .

Are you talking about the wallpaper on the lock screen or on the springboard (main app window). If you can SSH (use a program called WInSCP - its free and you can Google for it) you can access your iPhone's file system. Then you can manually change the background graphic. However, there are two files, one for lockscreen and one for the wallpaper on the app screen (Springboard).
