Well new geveys were needed for 6.0/6.0.1/6.0.2 firmware. Not yet certain if they work on 6.1, I would think your 5.1.1 one definitely won't work.

Hey thanks for the reply fellow laker fan! I did some more research and stumbled upon this blog post by Gevey:
GEVEY Ultra S for iPhone 4S iOS6 supports to the lastest release iOS6.1 / GEVEY

What do you think of the legitimacy of this? I want to buy Gevey Ultra S for ios6 but am hesitant as I can't find a lot of information about this company

That is their site. I have heard from one person that R-sim's still work on 6.1 so if that is the case the gevey sims for 6.0 should as well since they use the same technique to unlock. I have not confirmed this myself yet though.

According to a French forum I often read, a guy updated to 6.1 and its R-Sim 5+ still worked. Baseband 3.4.01.

You would have to ask the gevey people that. On 5.1.1 the furiousmod package is needed for the gevey to work on a CDMA 4S. So they would have to update that package to work on 6.1. Don't know when they will be doing that but I don't see anything that would stop them from doing so at some point.
