Thanks but No I have an official unlock that was sent thru iTunes so I'd much rather use the factory unlock rather than the new exploit.
I need to know how to apply my AT&T unlock without restoring on an iPhone 4s. I know how to do it with the Older iPhones just not the 4s.

If you are factory unlocked, it will be that way forever, even if you restore or move up to a new iOS.

Losing the jailbreak will happen for sure if you update.

http://repo.bingner.com then install SAM. Open SAM in Settings or SAMPrefs from homescreen. Hit Utilities and press De-Activate. SAM will deactivate your iPhone 4S for you then connect usb cable to the phone and open iTunes to activated your official unlock. No need for restore you'll save your jailbreak!

You can do above ^ or you can simply put a sim from any other carrier besides AT&T (Tmobile) and then connect the phone to iTunes. It will unlock it for you. Only reason to deactivate with SAM would be if you hactivated. Which you wouldn't have with a 4S.

I wouldn't restore if I didn't have to hence the reason I'm asking the forum how to use my unlock from AT&T without doing that...

The answers have been given, perhaps we are not understanding you completely. If it was unlocked through iTunes as you say, it will always be unlocked, no matter what.
