Install ultrasn0w & any time you ever want to update your phone... PRESERVE that very special baseband You don't wanna lose it.
Ultrasn0w you can get from cydia once the phone is jailbroken.

I have tried to JB using LimeRa1n and although it goes through, nothing visible change's on the phone?
Couple of questions:-
Is it wise to leave the base band alone at 1.79 and update the firmware only using sn0wbreeze or something?
What firmware should/can I update too, do I use sn0wbreeze as well?

Best bet will be to use Redsn0w to jailbreak the firmware your already on (unless you have 5.0.1 shsh saved as this is the latest untethered jailbreak). When 5.1 untethered jailbreak is available, then indeed use something like sn0wbreeze or redsn0w to create a custom firmware that will preserve your baseband.. I can't stress enough that if you run an update in iTunes, you will lose that baseband & any chance of avoiding a factory unlock.

New to jailbreaking? Have a look at my Redsn0w Guide

Thats what I thought. So do I install a custom FW (Version 5.01) using sn0wbreeze, keep my base band at 1.59 and then save my shsh file and then JB it????
I'm Confused.com, sorry I'm new at all this. Tempted to just sell the phone and buy one on the right network. I do like a challenge though but I like to understand what I am doing. I should spend some time reading through some guides I guess but working in I.T. I'm usually tired by the time I want to do things for me.

You won't be able to get to 5.0.1 since Apple has stopped signing it. You will have to be on an earlier firmware. It's gonna have to be a firmware earlier then 5.0.1 :/I will no longer be very active here anymore due to a variety of reasons.

So like I say... Just jailbreak it on what your already on & install ultrasn0w... 5min job
Personally... For £20... I'd just pay to get it factory unlocked
