If Redsnow encounters issues, it could leave the phone in a bad state. It's likely you need to start from the very beginning.

You didn't mention trying a different computer. It could help. Although after several failed attempts, it's best to start completely over

How do I get it out of DFU back to normal so I can retry right from the start?

Hold power + home for 5-10 secs. You'll hear the high-low computer sound as confirmation. Phone screen ... might ... quickly flash just before powering off.

Yes. When it's powered off - it's off.

Is Itunes meant to be open at all times while jailbreaking? As it closes for me could that be the problem? Also if there any downsides to using Jailbreakme method and could I use that instead if Redsn0w doesn't work?

Let iTunes do it's thing - doesn't matter. Just ignore it until needed. Jailbreakme is for iOS 4.3.3
