I had the same problem with my 3G S until earlier today.
What I did was do a restore using redsn0w and the 4.3.1 firmware from Apple (yours would be at http://appldnld.apple.com/iPhone4/04...4_Restore.ipsw)
I also opted to upgrade to the iPad baseband (which is 06.15.00).
Once back up and running install ultrasn0w using Cydia, and reboot.. your provider and signal should be displaying as per normal..

Mine is factory Unlocked,I would like the normal baseband and no ultrasn0w,else I would have bought it factory unlocked for nothing ;/
Giving me error 3194 now when I try downgrade, had 4.2.1 SHSH

make sure your hosts (C
windows\system32\drivers\etc, open with notepad)file is free of any reference to apple servers, and try again.
