can anyone take this forward, please?

Have Cydia installed so I believe I'm jailbroken?

f0recast advises that device is jailbreakable, unlockable and untethered...

BootNeuter is installed and indicates

Bootloader 4.6
Neuter ON
FakeBlank OFF
Baseband unlock ON

Device will work as an ipod touch.

As soon as I put in my Orange SIM, screen goes to

>DIFFERENT SIM DETECTED- please connect to iTunes<

on doing that, itunes opens with message

You need to restore it to 3.1.3 and hactivate it with redsnow 0.9.4 (point redsnow to firmware 3.1.2 for it to work).

Needed Access to an intel mac to get it done, but it was straightforward.
