What kind of phone? what firmware? sounds like you may have to put in DFU mode and restore.

so you don't know if it was on 2.1, 3.0, 3.1.2 and so on?

Put the phone in DFU mode, battlecrushr gave you a link to help you here. (DFU mode is a blank black screen)
In the gray header bar above ^ you will see a link that says "Guides" choose your firmware you want, I suggest 3.1.2, download it, and also the jailbreak if needed from there.
For firmware, go here.

On a PC, hold "Shift" and click restore, point to the firmware that you download, let it do it's thing and restore, then jailbreak if needed.

Yes, you must use iTunes to restore the phone, it's the only way.

Yes you will need the internet to download the firmware, You will have to re-jailbreak it once you restore.

Download the firmware, Put the phone in DFU mode, then hold the shift button on your keyboard and click restore in iTunse and point to the firmware that you downloaded. Let it do it's thing.

you never know, corrupt file, an app that you installed. It's not uncommon and no big deal. It's good to clean the phone OS out and install new anyway.. It will run better.

You may have an issue jailbreaking and may have to update to 3.1.3
