iPhone 3G NO DATA?

I'm planning on purchasing an iPhone 3G unlocked. I want to use it w/o AT&T's data plan. I've heard you can jailbreak it and change the APN. Does this really work? Will AT&T still detect that I'm on an iPhone and make me get a data plan?

AT&T will know you are on an Iphone and do NOTHING about it as long as you don't call them or mess with your plan details when the sim is in the iphone. Be smart and put the sim back in an old phone before making modification to the plan. (check that the IMEI is back to the old phone. This takes a while some times)
