Those links worked like a charm and I am now using my AT&T sim card in the Fido iPhone.
I have a couple questions, if you have a minute.
I took my AT&T sim from my AT&T 2G iPhone and placed it inside my newly unlocked Fido 3G iPhone. Everything works well, so far.
My question is, why is the (now unlocked) Fido 3G iPhone connecting to a "3G" data network instead of the "E" (EDGE) data network? My 2G AT&T data plan should be EDGE only. I'm worried about being charged for data minutes I do not have a plan for. *UPDATE* It looks like it corrected it self and it's now showing the "E" logo. Soon after, I restarted the iPhone and the "3G" logo was back. Perhaps I had a weak cellular signal while it was connected to EDGE.
In the end, my idea is to have this setup:
1) 3G iPhone - AT&T voice plan + data plan (I'm going to take my old sim card out of the 2G iPhone and leave it in the 3G)
2) 2G iPhone - AT&T voice plan, no data plan (I'm going to take an activated AT&T sim card out of an old motorola phone and leave it in the 2G iPhone)
I plan to disable cellular data in the 2G iPhone to avoid racking up data fees with AT&T.

I pwned/unlocked my 2G iPhone (v2.2) and I was able to use the AT&T sim card from my older motorola phone. So far, everything works.
I did research trying to figure out a sure way to disable EDGE access, thus, trying to avoid data charges (will not be purchasing a data plan for this iPhone). I tried BossPrefs without much luck.
I believe I successfully disabled EDGE accessibility by browsing to
APN Changer in safari. After inserting dummy APN information, whenever there is a "E" symbol present, then I try accessing any type of data service (safari, youtube, email), a pop-up window notifies me:
"Could not activate cellular data network: you are not subscribed to a cellular data service"
I assume this is due to the dummy APN which unlockit.co.nz provides.
I am still a little skeptical about how permanete this will be in the long-run. I've read too many stories about outragous bills due to data-charges w/o data plans.
Are there any other pre-cautions I can take to ensure EDGE will remain truely disabled?
