virginized the phone, but is everything off now?

to get my phone exchanged at apple I had to restore it (via itunes 8 with one click)
the iphone states now, that the SIM is not supported. therefore I cannot go further than "emergency call" on the phone and I don't see anything about the phone in itunes.
how can I now control, if all my data really got wiped and that it really has it's old settings (firmware, baseband etc) and apple doesn't see anything about my unlocking, jailbreaking etc.?
these were the settings before I did it:
Iphone G2, 16GB
FW: 2.1 ((5F136)
Carrier: 2.6
Model: MB384LL
Modem FW: 04.005.04_G
