So i was wondering, if i were to upgrade the phone's firmware to say, 1.1.1, will it brick the phone? And if not, should i upgrade it to a jailbroken 1.1.1 or the normal firmware...is that even possible? Jailbreaking unlocked iphones are so hard in comparison to the touches.

It will not brick your phone. Try upgrading to a higher version like 1.1.4 if you want to keep or use your current apps since version 2.0 and up is not compatible with all the apps in 1.1.4.
