Super important question about upgrading

Ok, so this IS super important.

Can someone tell me, STEP BY STEP,

HOW DO I UPGRADE MY IPHONE TO 2.0 (UNLOCKED AND ACTIVATED)?

I got my iPhone this past April, so I used ZiPhone to unlock and activate it, but what do I do when the new ZiPhone comes out? I'm not really sure if I have to restore it in iTunes first or something else.
