back up data on my ullocked iphone

hi there i curently live in the uk and i deside to buy a new iphone directly from united states
when i recieve it i was happy,iphone is a great device and after while i start put some icons to my iphone and those mix up with my other icons and some themes..no big deal and after while i get rid off with them and there is my question:
i try do full restore throught itunes and restore my iphone to original setings and now i need to unlocked and do jailbrake and a lots of other stuff
but i back up my iphone to itunes before i start mess around
is it some way how to recover my back up data to my iphone???????please help i dont want to let someone to unlocked my phone again and pay something around £20
i thing should be a way how to do it.. thanks aver so much fo your response
