unlocked iphone capabilities

im wanting an iphone without the 2-year contract and the iphone plans..so i was wondering about an unlocked iphone..im with ATT and i currently have a blackberry pearl..what im wanting to know is if i buy an unlocked iphone and put my sim in it what all will i have access to? everything(safari, texting, etc) or will it be limited without the iphone plans?

anyone? im trying to decide wheither to buy the new 3g or an older unlocked version!! please help!!!
