Question about unlocking.

Hi! I have a quick question about unlocking my iPhone. Now, I'm fully aware that I can't unlock a 1.1.2 OOB until a dev team figures out how to do so, but that's not my true concern. Essentially, all I want my phone unlocked for is playing NES and utilizing some of these cool user-created Apps; I fully intend on having AT&T provide my cellular service!
My question is whether or not I can subscribe to AT&T today and still be able to unlock my phone at a later date in an effort to add these applications. Hell, do I even need to unlock my phone to run NES and these applications? Any help would be appreciated.
