The only time you have to sign a new 2 year contract is if you get the subsidized price for the iPhone. If you pay full price for the phone then when your contract is up you switch to month to month...

You sign a new contract when
1) you ready for upgrade and u get the 199-299 pricing usually 12-22 months into your contract
2) You do an earily upgrade and it 399-499 pricing Usually between 31 days and 6 months
You dont have to sign a new contract when you buy the phone out right 599-699 Your allowed to do this when ever you want and does not effect your plan and or contract.

When I early upgraded my 3GS to a 4 they had to set up another 2 years from that day. But I still grandfathered in all my previous data, etc.
