Tmobile
I'm in a situation, I want to buy an iPhone 3G but I'm unsure. I know tmobile 3G doesn't work on iphone cause of different frequencies. Will EDGE and texting work? If so what tmobile plans should I be using? As of right now I'm using a G1 with the G1 400 text/unlimited internet plan. If anyone is selling a 16GB iphone 3G i'll buy it.

You can get any Even More (Plus) plans with the $10 unlimited web option. The cheapest is the Even More Plus + Unlimited text, and add the $10 service. That's $50/month for unlimited text, data and 500min. If you want unlimited everything it's $70. And like the above post says, everything will work except 3G. Visual Voicemail will also be unavailable.

I'm currently on a family plan with minutes. All I need is Text and data. I'm unsure which works though.

Yes Web2Go is what you want.
From there, check out the carrier bundle thread (stickied at the top) for further information on what bundle to use. Do not use internet2.voicestream.com until you decide on the data plan you want to get.
And regardless, when using the bundles, there is no need to type in any settings.
