The iOS 5.0 bundles are useless without a patched CommCenter, and there is no CommCenter patch for iOS 5.0/5.0.1 yet because the people who know where and how to patch it have not bothered to release a Cydia package that can be installed by anyone. There are instructions on how to patch CommCenter manually, but should you follow them, it is very likely that you will give yourself a broken iOS that will require a restore again and again.
