Is your iphone jailbroken? If so go to cydia-sections-tweaks and download apn editing then reboot your iphone.

Did you install the "TMobile US Carrier" package from Cydia? Try removing that, it brought the APN settings back for me. (and everything still works fine).

The Cellular Data Network only shows up when you are Jailbroken AND unlocked. I would restore to 3.0 and run redsn0w again. Finally when done set the phone up as new in iTunes.

FIX for data costs on Firmware 3.0 - edit APN settings
.
.
.
.
.
.
It seems to be a problem of FW3.0 that the data connection is still active
wether or not you switch of Edge/G3 in sbsettings… The problem exists
on both of my unlocked and jailbroken devices (2G + 3GS). The APN EDITING
App from Cydia also didn’t work for me… Cellular Data Network
never showed up in my settings>network. I spend over 30€ till I found
out that there was a data connection - I always overlook it in sbsettings
since I never had any problems on 2.2.1. Anyway here is the workaround:
To edit your APN Settings on FW3.0 and avoid data costs you’ll have to…
1. Access your Phone via FTP/SSH
2. Open up the directory /System/Library/Carrier Bundles/
3. Open you Providers SIM-Card, in my case "TMobile_Germany.bundle"
4. Open the carrier.plist in your favorite editor - it should look something like this:
5. Add the bold text entry in the example code to your .plist:Code:<?xml version="1.0" encoding="UTF-8"?> <!DOCTYPE plist PUBLIC "-//Apple//DTD PLIST 1.0//EN" "http://www.apple.com/DTDs/PropertyList-1.0.dtd"> <plist version="1.0"> <dict> <key>AllowEDGEEditing</key> <true/> <key>BookmarkURLs</key> <array> <dict> <key>BookmarkName</key> <string>T-Mobile web'n'walk</string> <key>BookmarkURL</key> <string>http://www.t-mobile.de/iphone-favoriten</string> </dict> </array> <key>CarrierName</key> <string>T-Mobile</string> <key>IntlDataRoamingSwitch</key> <true/>
6. Save and upload your carrier.plist to your iPhone. It should be instantly accessible (if not simply reboot).Code:<key>AllowEDGEEditing</key> <true/>
7. Now everything is showing up in settings-->general-->networks: Cellular Data Network
I edited my original edge date:
from:
to:Code:APN: internet.t-mobile Name and Passwort: whatever
If I want to use Edge or G3 I’ll have to reverse point 7 and active Edge/G3 in sbsettings.Code:APN: internet.t-mobile1 Name and Passwort: whatever
I’m really hoping there will be a fix soon

Now it’s even easier since there
is a Fake-APN Toggle for SBsettings.
so… GO AND GET IT!!

The problem is that there are people reporting that the Fake APN doesn't prevent them from getting Data IP. In that case they cannot connect to Internet except Wifi, but they do get Data IP and eventually get charged for data transfer.
I am trying to isolate the cause for that and find the ultimate solution for no Data IP.

I turn of all my toggles to avoid data traffic: 3G, EDGE
and turn on: fakeAPN

Fake Apn and iPhonenodata don't work on my iPhone 2G OS 3.0.1 unlocked and jailbroke with Redsnow.
