Settings - Mail, Contacts, Calendars - Import Sim Contacts

Itunes only recognizes an AT&T simcard.

sync your contacts to outlook with your old phone, then import them to your iphone

How old is your SIM? It must be grossly outdated for it not to be recognized.

I have heard of many people getting new sim cards and that fixing their issues.

Well First Of All Make Sure You Saved Your Contacts To Your Sim In The Old Phone. When Adding A Number Most Of The Time It Just Adds It To The Phones Internal Mem. So Just Pop The Sim In The Old Phone And Make Sure They Are Saved.
