    Can anyone tell me where the stock SMS background for the iphone is located?

    Navigate to system/library/private frameworks/chatkit.framework

    Edit: just re-read thought you said bubbles for some reason. Why are you looking for this? If you want to change it just throw a folder in winterboard with SMSBackground.png (480x480)

    I'm on iOS 5 beta 2, and want to change it manually since winterboard doesn't work yet
