Do you recall what size the image was?

mine was 60x60. but it is a tiny bit big (barely noticable) try 60x59 or 59x59

I just figured out how to do it... it is kind of hard to explain
Download iFile and WinterBoard from cydia then begin the tutorial:

    Part 1:

    1. Open iFile and click the back button as many times as you can go back.
    2. Click on 'private'.
    3. Click on 'var'.
    4. Click on 'mobile'.
    5. Click on 'Applications'.
    6. You should see many folders with random letters and numbers. Find the folder that belongs to the app that you want to modify. *you can tell because when you open it, you will see xxxxx.app. (which is usually the name of the app)
    7. Click on xxxxx.app.
    8. Scroll down to 'Info.plist' and click on it.
    9. look for the text that I highlighted in #9.
***EVERY APP HAS A DIFFERENT TEXT!!!
Write it down, you WILL need it . Also note the icon.png/Icon.png (remember both the Icon/icon.png and the Icon@2x/[email protected] Different apps use different icon file names, and you need to know it EXACTLY for later. *CaSe SeNsItIvE!

    Part 2:

    10. Make a folder and name it 'Bundles'. *CaSe SeNsItIvE!
    11. Make a folder inside 'Bundles' and name it the EXACT SAME as the text from #9 (the red part). *CaSe SeNsItIvE!
    12. Move your desired icon (57x57 or 114x114) into this new folder.
    13. Rename the icon to what was boxed in green in #9. Remember that '[email protected]' is RETINA ONLY (114x114) and 'xxxx.png' is for standard icons ONLY. *CaSe SeNsItIvE!
    14. Move the 'Bundles' folder to a new folder. Name it anything you like.
    15. SSH into your iDevice and move your folder to /private/var/stash/Themes (there may be more than 1 theme folder. If so, put it in the most recently updated one.

    Part 3:

    16. On your iDevice, open up WinterBoard and check your folder.
    17. Respring your springboard.
    18. YOU ARE DONE!!!

*With this method you can switch the icons back in WinterBoard and the icons are actually scaled correctly.

Icon sizes are 59x60 3G(s) non-retina and 118x120 for iP4 retina. Hope this helps. FYI there are some icons that are a non-standard size(iBooks for 3G 57x57)
