I don't know of any tutorials, but if you have a basic understanding of Photoshop, you have all the tools. I save my icons for apps as PNGs (61px-67px). I suggest you download a compete theme through Cydia to see what file sizes are and names, etc. Also, you can adapt files to suit what you want.
