If you want to change the text color on the dialer, you'll have to create your own custom dialer. The numbers are part of the image, so could change the font, color, size, anything that you want it to look like. You'll need to create two dialer images. One that is normal and that will show when the keys are pressed. They will be called dialerkeypad.png and dialerkeypad_pressed.png. Look around the forums, there is probably a dialer template available. Hope this helps.
