I'd like to know this aswell, would be much easier than adding to iPhoto, syncing, then resyncing to delete it!

This depends. Do you want the wallpapers to also show up in the photo library? If so, you're stuck with iPhoto syncing. You can also SSH wallpapers directly to /Library/Wallpaper, the caveat here is that you also must manually create a thumbnail for the wallpapers you're uploading or else they won't show up in the Wallpapers settings menu.
There is a guide here on how to create iPhone thumbnails. Guides section.Get "iPod & iTunes for Dummies", it'll change your life.

On my 1.1.3 Phone it works like this:
- Get a Wallpaper
- Make it *.png
- SSH: Locate to Library/Wallpaper
- Check what's the next number of the filename (e.g. 118.png is the last wallpaper on the phone)
- Rename your Wallpaper.png to 119.png (accordingly to your next Wallpaper number.)
- Upload 119.png to Library/Wallpaper via SSH
- Open Settings/Wallpaper (Thumbnail-File will be generated automatically.)
- Be happy and set your Wallpaper.
Cheers, hope i could help. If yes. Say Thanks.A*obe CS3 by ubik "teh CS3 iPhone theme":

You can also rename the Wallpaper you like to "Wallpaper.png" and place it into any theme folder you want so that way if you find a theme that you really like but not so much the wallpaper it came with, this is the way of the Jedi. This is also true for lockscreen back grounds which should be named "LockBackground.jpg" as well as backgrounds for your MMS which should be named "SMSBackground.png"... All of these, if using winSCP, would go like this for folder placement... var/stash/themes/NAME OF WHATEVER THEME BEING PLACED IN/place here... this is an alternative to placing stuff in the user lockbackground and user wallpaper theme folders.
