WinterBoard is the program that would change themes for you.

i've already jailbroke my phone... how do i get the winterboard?

you should have Cydia installed on your iphone. From Cydia, browse for WinterBoard and download it. Themes are on Cydia also...download any themes you want...then run WinterBoard and choose the theme that you want to change.

you have to use ssh
thats detailed so i wouldn't bother just use the ones you download of cydia
