re-restore iphone 4s after provider unlocked

I require some assistance with my iphone 4s. It is currently on ios 5.1.1. Today I did a re-restore with the latest redsn0w and it is now showing the welcome/setup screen(not activated). I called my provider and they unlocked it for me. I was told to conect to itunes and perform a restore, and when done itunes will show "now unlocked" message. I want to remain on 5.1.1 but from my understanding, a restore in itunes will update to 6.0. Can I restore in itunes(shift restore method) and choose 5.1.1 firmware, or must I go to 6.0? And if on 6.0, can I re-restore to 5.1.1?

I ddn't want to connect to itunes before I aquired more info on the matter, but I tried it just now and apparently, you do no need to restore to recieve the "now unlocked" message. My 4s is now unlocked!
