Can I untethered jailbreak and unlock iPhone 3GS with iOS 5.0 and 05.16.05 baseband ? If yes, I would like to get some tutorials.

Yes & no in that order. You can untether it, but you cannot unlock on that baseband, you'd have to upgrade your baseband to 06.15.00 (Ipad baseband) & lose the gps. Currently there is no way to downgrade basebands either.... so it's up to you.

The Redsn0w you would use is redsn0w 0.9.10b3.
