Could this mess something up?

Hello! So I recently lost my sim tray and was trying to finish restoring my phone. iTunes said something like, "No sim card detected" and it would not let me do anything. So I decided to play around with redsn0w. I jailbroke it while it was at the connect to iTunes screen. Then it let me through as if there was a sim card inserted. I'm trying to use this iPhone(3G) as a iPod. Could that mess something up? Is the messages and phone app suppose to be there? What would happen if I mounted my iPhone on my pc and deleted the phone and messages app?

No problems.

Don't do it. If you don't want them around, I think you can hide their icons with SBSettings or another icon hiding utility.
