iPhone 3G 8GB with iOS 3.1.2 wants more...

I want to upgrade my wife's iPhone 3G beyond 3.1.2. Her biggest complaint is that she can't get SMS. I unlocked her using Blackra1n a few months back when we switched to T-Mobile and she hates my Android. I got permission to upgrade her to the highest iOS and dual boot her with Android so she can basically see all the potential her hardware can attain. I don't know how to back up her apps and data, upgrade to a better ROM, and then restore her apps and data. I would appreciate any links to applicable tutorials. I can do just about anything that doesn't require a Mac, because I don't own one and they're not free.

Since I went Android in June, I can't even remember how to use an iPhone.

Apps and data are automatically backed up when sync to itunes on a computer.
