I'm currently using a Sony Ericsson phone with a Fido plan. I just purchased a locked 8GB iPhone with 1.1.1 firmware. After I unlock it, can I just remove the SIM card from my current phone and put it in the iPhone, and I'm good to go?

Pretty much yup! But i'd have that fido sim in your Iphone when your doing the unlock btw...
