So far you can't. Unless this isn't an iPod, but is an iPhone. This is the iPod Touch forum.

I dont know where you work but with my job sometimes I go into sensitive areas and with my old TREO getting away with keeping my phone was harder than the iPhone.
Cheating way:
Here is what I do when I need to. I downloaded rSBT and hide my camera app. I also hide any programs that may be able to "find" it if someone looked at say finder. I also hide rSBT I have dock installed and just use that to bring it back up. I am also using summerboard and i go back to the default theme so it looks like an unmoded iPhone.
Security looks at it sees no way to access the camera and off I go.
Honest way:
If you really want to get rid of it then you would need to get into your phone SSH probably the best????
then just delete it from there. I would make a back up first however so that I could reinstall it later.

i had the same problem and ended up changing the extension for mobileslideshow.app and powercycling since I still want my camera when not at work.

google "iphone camera removal". there is a company out there that will physically remove your camera from your iphone for like $99USD.

I have the same problem at work. I followed the directions on this web site and removed by camera myself! Now I'm sure I will not get in trouble.
