Local editing of strings on iPhone?

Since I restored my phone, I haven't re-modded because I need to take it to a genius bar tonight to get my cracked screen repaired. But just before updating, I noticed that the Installer app had added a text editor to the available apps.

So that got me to thinking: Could I go to, say, DisplayOrder.plist in mobilefinder, copy it into the directory under the name DisplayOrder.txt and then edit the text file in the text editor and then, saving that, rename it "DisplayOrder.plist" to overwrite the older one?

I won't be able to test this for about a week, but it seems feasable in theory to change your display order or maybe SpringBoard.strings directly in the iPhone.

Has anyone tried this?
