Im using iPHUC when needed, and independence

depending what version of firmware your using, independence will run with anything but 1.1.2 right now.

Cyberduck or Fugu to SFTP into the phone to do things manually

I, too, just got a new mac (base model iMac) and the first thing I put on the phone was AFP, and it would work great for one phone, but with 2 phones its kind of a pain (wife's and mine) but it is still SUPER easy to use...if you can use finder, you can use AFP.
iPhone, uPhone we all phone for iPhone.
