Hi I have upgraded my 3G to os3.0 and jailbroke, installed winterboard too.

problem is I cannot get any themes to work at all...they show up in winterboard, but when selected I just get the springboard timer then a blank screen with a beep for a second, then nothing...original apple theme still there!
open winterboard again and the theme shows as still selected!

what is going on??

Well i've got winterboard on 3.0 and it works fine for me. Have u tried restarting your phone?

Also, take a look in Library/Themes and check if there are any themes in the folder. If there are, open them up and check if they have an icons folder etc.

If that doesn't work, the only thing i can suggest is to reinstall winterboard and trying again
