What firmware? Im assuming 1.1.1/1.1.2, so download a program called Customize and you hide and organize stuff. Also, you could try Categories which pretty much makes folders for apps like a Games Folder and all of your games would go inside the folder. You open up the folder and you have a list of apps to choose from...

Well, both categories and customize work under 1.1.3 as well.

in 1.1.3 you don't need any external programs (like categories), just organize your springboard into various categories,
each screen can have less than 12 icons if you'd like. just hold down your finger on an icon and wait for the wiggle, and then drag the icons that you want on a different page to the next page.
I currently have my phone organized with 4 pages,
1) the stock applications (12 icons on this page)
2) games (only 6 icons on this page)
3) tools and preferences (voice recorder, smbprefs, customize, lockbox, to do list, rss, (8 icons on this page for me)
4) web apps (also 8 icons)
