That's trickier if you're only swapping your photo albums. If you use something like SwapLibrary, it will change all the libraries Music/Video/Photos. That way, the first time you run SwapLibrary, iTunes will recognize your iPhone as a brand new unit, and you can call it something different.
If you're only switching Photos, then what you would need to do (unfortunately each time you synced) is uncheck the photos from Album 1 and check the photos from Album 2. And vice versa. I used to do that until I utilized SwapLibrary, even if you don't care about the Music/Videos part.
